Pizza bianca

Every time I prepare  pizza, one I make bianca. In  2010 we visited  the Christmas markets in Merano, there we ate the "dinnede", a small pizza made ​​with whole wheat flour , sour cream, bacon and potatoes. I have not found the original recipe yet, but if you should do,  let me know! Nonetheless I decided to revise in that way my original pizza, topping it with  the dinnede’s ingredients! Obviously  you can do the same: prepare the base as in the recipe and top it as you want! As the pizza base has not to be too high, the ingredients are enough for two round pizzas.

ingredients:
500 grams flour
1 heaping teaspoon of salt
1 teaspoon of sugar
1/2 cube of yeast
1 tablespoon extra virgin olive oil
water q.b


250ml sour cream (or normal cream)
2 medium boiled potatoes
Speck (Alto Adige typical ham), cut into strips – alternatively use bacon
salt
pepper


preparation:
Mix flour, salt and sugar in a bowl, make a hole in the center put the yeast and dissolve with water at room temperature, begin to blend, add oil and mix well to form a smooth ball. If you do not want to prepare the dough manually, mix everything in the kitchen robot. Let the dough rest in bowl covered with film  in a warm place for 2 hours. Regain divide the dough in half and put it in the pizza pan. Let it “rest”, still covered by the film, at least 30 minutes.
Top the dough with the cream (1 box for each pizza) keep apart a little quantity 'to put above the potatoes and the speck strips (1 potato for each pizza). Add salt, pepper, finally the remaining cream and bake at 200 ° C about 15 minutes
